If you're stuck finding the perfect gift for your dad but he basically has everything, you can't go wrong with a beautiful bottle of alcohol. (Assuming he likes to drink in a healthy manner.)
Currently, whisky lovers are in heaven thanks to a special edition of J.P. Wiser's Dissertation, which is available exclusively at the LCBO ($64.95). With only 12,000 bottles ever produced, the whisky will be available only for a limited time.
But it's worth it: The almost-orgasmic wood character of a barrel is one of the most important factors when it comes to producing an exceptional whisky - and Wiser's has it in spades.
This is what blender Don Livermore discovered when writing his Dissertation thesis in 2005, which focused on how the richest notes of vanilla, toffee and spice can be drawn out through the quality of barrels. By using infrared sensor technology (a technique pioneered by Livermore), he was able to determine exactly how much wood would be extracted into the whisky after just 30 seconds, and thus streamlining the traditional process of whisky blending. After sitting in the Hiram Walker Distillery after all of these years, the liquid - aptly named Dissertation - just won top honours at the World Whiskies Awards and is coming to market for a limited time.
