Air Canada's enRoute magazine is celebrating the best in new Canadian cuisine with the announcement of the top 10 new restaurants in Canada.
EnRoute's food writer Chris Nuttall-Smith dined at restaurants opened between summer 2008 and summer 2009 and found eclectic dining experiences across the country, fueled by young, vibrant chefs who rely on fresh ingredients and exciting techniques to produce succulent dishes.
Congratulations to Cibo Trattoria in Vancouver, "one of the most exciting things to happen to the way we eat in years," according to Nuttall-Smith, who named the restaurant the best new eatery in Canada.
Rounding out the top four are:
2. The Black Hoof in Toronto, which is known almost entirely for its excellent cured meats.
3. Rush, in Calgary has a "local-inspired menu [that] is smart, cosmopolitan and completely delicious," says Nuttell-Smith.
4. Atelier in Ottawa is "Chef Marc Lepine's labour of love ... one of those rare science-inspired kitchens where the food isn't a chore to eat," says Nuttell-Smith.
